Arturo Alfonso Schomburg

Schomburg wrote that Black people had both shaped the regional cooking of the American South and created a distinctly African American cuisine. A Harlem-based historian from Puerto Rico, his collections form the basis of the Schomburg Center for Research in Black Culture.
