Columbus B. Hill

Denver, Colorado | 1890

Hill and others like him were ambassadors for Southern-style barbecue in the West. A formative barbecue pitmaster, Hill migrated to Colorado from Tennessee in the 1870s. He famously hosted a barbecue for 25,000 people on Independence Day in 1890.
