When he graduated culinary school, it was important to Damarr Brown to serve his externship with a Black chef. “It’s hard to see yourself doing something if you don’t see anyone who looks like you doing it,” explains Brown, who’s now positioned as chef de cuisine at the award-winning Virtue Restaurant in Chicago, IL.
