Geraldine Griffin

Harlem, New York | 1940s

Griffin was the first chef at Minton's Playhouse in Harlem, the birthplace of Bebop. She was known for her smothered steaks, fried chicken, and collard greens. Later, she opened her own restaurant across the street on Seventh Avenue / Adam Clayton Powell Boulevard.
