Isaiah Le Count

Philadelphia, Pennsylvania | 1835

Le Count was a sailor who learned to cook in France and Spain. He opened the United States Refectory, a fine dining restaurant with an all-Black staff. Considered one of Philadelphia’s top chefs, his signature dish was deviled lobster bathed in salty cream sauce with cayenne.
