Philadelphia, Pennsylvania | 1777

Black women cooks of Caribbean origin sold their homemade gumbo with okra, tripe, and plantain or vegetable dumplings. Eventually celebrated as Philadelphia's pepper pot, the hearty dish used inexpensive cuts of meat and vegetables, and was sold by street vendors.
