Jackson went to culinary school in Chicago but returned to his hometown of New Orleans to work as a chef at D.H. Holmes Potpourri. His cooking impressed Paul Prudhomme, who made him the executive chef at Prudhomme’s newly opened K-Paul's Louisiana Kitchen in the French Quarter.
