Betty Simmons

As a child, Simmons was sold from her plantation home in Macedonia, Alabama, and taken to a plantation in Texas where she learned to cook. Those kitchen skills spared her from field labor and helped her transition after Emancipation. She died in 1941 at the age of 108.
