Calvin Copeland

In 1967, Copeland, a caterer, opened Copeland's Restaurant as a Harlem destination for fine Soul food and homestyle country dishes. Patrons were offered chitterlings and champagne, macaroni and cheese, greens, potato salad, and bread pudding.
