Charles Gabriel

Gabriel is chef-owner of Charles’ Country Pan Fried Chicken in Harlem. Born to sharecropping parents in Charlotte, North Carolina, he moved north in 1965. He cooked for 22 years at Copeland’s before starting his own business selling skillet-fried chicken and other Southern classics.
