Chicago, Illinois | 1886

Smiley, Chicago’s foremost caterer, was born in Canada and served at society parties before launching his own business. He ran the Red Roses Café inside Rosalie Music Hall and used their kitchen as his catering office. In 1894, he built a catering headquarters valued at $100,000.
