Chuck Wagon Cooks
1860s
Some Black cowboys served as chuckwagon cooks. During cattle drives, they were responsible for preparing all meals and setting up and breaking down camp. They made dishes from dried ingredients, foraged greens, freshly caught fish, and wild game.
