Henry Perry

Kansas City, Missouri | 1908

Perry, known as the Barbecue King, sparked the Kansas City barbecue style. Originally from Memphis, Tennessee, he moved west in 1908 and began grilling beef, possum, woodchuck, and racoon over pits of oak and hickory. He trained Kansas City barbecue legends Charlie Bryant and Arthur Pinkard.
