Lucille Bishop Smith

Smith invented the first hot biscuit mix. An entrepreneur and chef born in Crockett, Texas, in 1892, she established the Commercial Cooking and Baking Department at Prairie View A&M University in 1937. She published Lucille’s Treasure Chest of Fine Foods in 1941.
