Samuelsson, a New York City chef of Ethiopian heritage and Swedish upbringing, opened Red Rooster in Harlem in 2010. Named for the legendary Harlem Renaissance-era speakeasy, the restaurant celebrates the roots of American cuisine with dishes from across the African diaspora.
