Rufus Estes

Estes worked as a Pullman Porter, then became the steward for tycoon Arthur Stillwell’s private rail car. His work as a corporate chef led to his 1911 book, Good Things to Eat, which offered recipes for 591 dishes including Creole chicken gumbo, sauces, and Southern-style waffles.
